Apple Cinnamon Cobbler

Fall is sort of here in south Louisiana.  It's still humid outside but not quite as humid.  So that's our Fall.  I decided that I needed a Fall-ish dessert.  Yes, I said needed.  Don't judge me.  So anyway, I made my Mama's cobbler recipe but instead of the regular fruit I used apple pie filling.  It came out great!  Like an apple pie but less work!  My kind of dessert.  A scoop of vanilla ice cream on top might even be necessary. Just saying.



Here's what I did:


APPLE CINNAMON COBBLER

1 stick unsalted butter (real butter is best!)

1 cup self-rising flour

1 cup sugar

1 cup milk

1/2 tsp vanilla

1 can apple pie filling

Cinnamon Sugar:

1/2 TBS sugar

1/2 tsp cinnamon

Preheat the oven to 350 degrees.  

Place the stick of butter in a cast iron skillet.  If you don't have one, go buy one.  Just kidding.  But not really.  Everyone should have one.  If you don't, you can use a 9 inch square baking dish.  So, put the butter in the skillet and place it in the oven so that the butter can melt.


Meanwhile, mix the flour, sugar, milk & vanilla in a large mixing bowl.  Don't over mix it!  Stir just until the lumps are gone.  If you over mix it, the cobbler will be tough.



When the butter is melted, take the skillet out of the oven and pour the batter in.



Then, evenly spoon the apple pie filling over the batter.  



Mix the 1/2 TBS sugar with the 1/2 tsp cinnamon.  Sprinkle the cinnamon sugar evenly over the top.



Bake for 45 minutes or until golden brown.  



Let it cool for a while before cutting.  It needs to set or it will just run all over the place.  I let it sit at least 15 minutes.  The smell is divine.  You're gonna want to cut it immediately.   It's tough, but you gotta wait.



This cobbler is so yummy.  Like I said before it tastes like an apple pie but as you can see it's super easy to make!



 

I like to serve it warm with a scoop of Blue Bell Homemade vanilla ice cream. Wow!  It's Fall in a bowl.  

Store any leftovers in an airtight container in the fridge.  You can eat the leftovers cold or warm it up in the microwave.  Either way, yummy.  Give this one a try.  You won't regret it.

Fig Cobbler

I want to start today's post on a somber note.  I woke up this morning to news that 7 police officers were shot in Baton Rouge, 3 were killed.  My brother and nephew are cops in Baton Rouge so this hit way too close to home.  They are OK, but my prayers go out to the officers and families who are not, who are dealing with unimaginable sadness.  These officers were just doing their job, protecting all of us, and they were ambushed.  It's a horrific situation.  Please join me in praying for all of our men and women in blue and their families.

I have a fig tree in my back yard, a gift from my Daddy.  It's loaded with big, beautiful figs.  The variety is called LSU Purple Figs, really, a variety of figs named for a college football team.  Welcome to the South.  Anyway, these figs are so pretty I just had to make them into a delicious dessert.





FIG COBBLER

4 cups chopped figs
1/4 cup sugar
1 stick butter
1 cup milk
1 cup self-rising flour
1 cup sugar
1/2 tsp vanilla extract

Mix the chopped figs with 1/4 cup sugar.




Let them sit, covered for at least 30 minutes, or until juices form.  You can do this the night before and let them sit in the fridge overnight.  That's what I did.




Preheat oven to 350 degrees.

Melt the butter and pour into a 9 inch square baking dish (or a cast iron skillet).




In a big mixing bowl, mix milk, self-rising flour, 1 cup sugar and vanilla extract just until lumps are gone (do not over mix).



Pour the batter over the butter in baking dish.


Pour the figs and the juices over the batter, evenly distributing the figs.



Bake at 350 degrees for 45 minutes.



Let cool slightly before cutting and serving.

Look at the yummy, buttery, crispy edges!


And the delicious, tender figs!


Serve this with a scoop of vanilla ice cream (I love Blue Bell Homemade Vanilla).  Perfect!


You can substitute any fruit you like for the figs.  I've made this with peaches, blackberries, strawberries, and cherries.  It's a great basic cobbler recipe.

Strawberry Cream Cheese Cobbler

My Mama's peach cobbler is the best dessert on the planet (according to me, anyway).  Her blackberry cobbler is a close second.  Cobbler is a big deal in the South.  There are many different ways to make it.  Some are cake-like, some are more like crumbles, some even have a biscuit-like topping.  My Mama's cobbler is sort of a mix between a cake and a pie.  It has a thickened fruit filling with a sweet, crunchy, cakey crust.  And the best part is... it's super easy to make!

I have made many variations of my Mama's cobbler.  This one has strawberries and cream cheese.  Nothing wrong with that.

STRAWBERRY CREAM CHEESE COBBLER

1 pint strawberries, cleaned and sliced
1/4 cup sugar

3 oz cream cheese, softened
1 TBS powdered sugar

1 stick butter, melted
1 cup all purpose flour
1 1/2 baking powder
1/2 tsp salt
1 cup sugar
1 cup milk
1 tsp vanilla extract

Preheat oven to 350 degrees.  Place sliced strawberries in a bowl and sprinkle 1/4 cup sugar over them.  Toss gently and set aside.  This breaks down the berries a bit and creates juice.


Pour melted butter into a 9 inch square baking dish (I used a square cast iron skillet and let the butter melt in the oven while it preheated).


In a large bowl, mix flour, baking powder and salt.  Add sugar, milk and vanilla extract.  Stir just until the lumps are gone.  Do not over mix or you will get a tough cobbler!  Pour the batter over the butter in the baking dish.


Next, evenly distribute the strawberries and their juice over the batter.


In a small bowl, mix softened cream cheese and 1 TBS powdered sugar thoroughly.  Dollop this mixture over the strawberries.




Bake in a hot oven (preheated to 350 degrees) for 45 minutes.  The cobbler will be almost set (still a little bit jiggly in the middle) and golden brown.  Tip:  place a cookie sheet with sides under your baking dish in case it bubbles over!



Let this sit and rest for about 20 minutes.  It will smell phenomenal and you will want to dig in immediately.  Don't.  It needs time to firm up.  I promise it will be worth the wait.



If you like strawberry cheesecake, you will like this cobbler.  It hits all those flavor notes but is so simple to throw together.  Top it with a scoop of Blue Bell Homemade Vanilla ice cream and you might just have perfection on a plate.  Enjoy!
